The aim of this review is to explore and discuss the two main aspects related a HeadSpace Solid Phase Micro-Extraction Gas-Chromatography/Mass-Spectrometry (HS-SPME-GC/MS) quantitative analysis volatile compounds in wines, both being fundamental obtain reliable data.
